VEGAN WHITE CHOCOLATE CRANBERRY SLICE

This healthy no-bake slice has a vegan white chocolate base, studded with tart dried cranberries.

Start with cocoa butter buttons for the vegan white chocolate base.

STEP 1

Melt the cocoa butter in the microwave or using a double boiler.

STEP 2

Blend raw cashew nuts and coconut in a blender or food processor.

STEP 3

Add it to the melted cocoa butter along with sea salt, maple syrup and vanilla.

STEP 4

Stir the cocoa butter mixture until well combined, pressing out any lumps.

STEP 5

Add dried cranberries, pistachio nuts and currants, or your favorite mix-ins.

STEP 6

Fold through the mix-ins until everything is well combined.

STEP 7

Tip the slice mixture into a lined loaf tin.

STEP 8

Sprinkle extra cranberries and pistachio nuts over the slice.

STEP 9

Chill the slice in the fridge until firm.

STEP 10

Once firm, cut the slice into pieces and enjoy as a healthy dessert.
