VEGAN CHOC CHIP SWEET POTATO BREAD

This easy chocolate chip sweet potato bread is vegan and gluten-free.

Start by baking or microwaving sweet potato until soft. 

STEP 1

Scoop out the sweet potato flesh and mash with a fork.

STEP 2

Tip into a bowl and add coconut oil, raw sugar, water, vinegar and vanilla.

STEP 3

Add buckwheat flour, salt, cinnamon, allspice, baking powder and baking soda.

STEP 4

Fold through dark chocolate chips or chunks.

STEP 5

Tip the mixture into a loaf tin, then bake in the oven.

STEP 6

Once cooled, slice and enjoy as a healthy treat or snack.
