NO BAKE KEY LIME PIE CHEESECAKE BARS

These easy no-bake bars are creamy, zesty, gluten-free, vegan and paleo.

Start by quick-soaking cashew nuts in boiling water.

STEP 1

Prepare the cheesecake base by processing almonds and coconut in a blender.

STEP 2

Tip into a bowl and add the remaining cheesecake base ingredients.

STEP 3

Press the cheesecake base  into a lined cake tin or dish.

STEP 4

Finely grate lime zest, then squeeze out the juice. 

STEP 5

Blend the soaked cashew nuts with the other filling ingredients.

STEP 6

Spread the cheesecake filling over the base, then chill in the fridge.

STEP 7

Once firm, slice into bars and serve with whipped coconut cream and extra lime zest.
