HEALTHY ZUCCHINI CHOCOLATE CHIP MUFFINS

These healthy chocolate zucchini muffins are paleo, gluten-free, soft and fluffy.

Start by grating some fresh zucchini.

STEP 1

Place paper towel on a plate and sprinkle over the grated zucchini.

STEP 2

Squeeze to remove excess moisture from the zucchini.

STEP 3

Measure out the squeezed zucchini to use in the recipe.

STEP 4

Add almond flour, raw cacao powder, baking powder and sea salt to a bowl.

STEP 5

Mix the dry ingredients for the zucchini muffins until combined.

STEP 6

Make a well in the center and crack an egg into the well.

STEP 7

Whisk the egg with a fork to combine the yolk and white.

STEP 8

Add almond butter, maple syrup, coconut oil and the squeezed zucchini.

STEP 9

Whisk the wet ingredients together.

STEP 10

Fold the wet and dry ingredients together until just combined.

STEP 11

Fold half of the chocolate chips into the muffin batter.

STEP 12

Scoop the chocolate zucchini batter into muffins cases.

STEP 13

Sprinkle the remaining chocolate chips over the muffins.

STEP 14

Bake the muffins in the oven, and enjoy as a healthy dessert or snack.
