GLUTEN FREE GINGERBREAD SNACK CAKE

This gingerbread snack cake is moist, gluten-free, dairy-free and made without molasses.

Start by baking or microwaving red potatoes until soft.

STEP 1

Once soft, scoop out the potato flesh to use in  the cake.

STEP 2

Add to a bowl with golden syrup, coconut oil, vanilla extract and an egg.

STEP 3

Blend with a hand blender until you get a smooth  cake batter.

STEP 4

Add almond butter, ginger, cinnamon, allspice, cloves, baking powder and salt.

STEP 5

Stir the cake batter until smooth and well combined.

STEP 6

Spread the gingerbread cake batter into a lined loaf tin.

STEP 7

Bake the gingerbread cake in the oven for 50 minutes.

STEP 8

Enjoy the gingerbread cake as a snack, or dessert topped with whipped coconut cream.
