EASY PESTO PASTA WITH PARSLEY

This easy pesto pasta is made with parsley and cashew nuts for a quick and healthy vegetarian dinner.

Start by boiling some water in a large saucepan.

STEP 1

Once the water is boiling, add a generous pinch of sea salt.

STEP 2

Add your favorite pasta, such as gluten-free penne, and cook according to the packet.

STEP 3

While the pasta is cooking, place fresh parley leaves in a food processor or hand blender cup.

STEP 4

Add freshly grated Parmesan, or another hard cheese such as cheddar.

STEP 5

Add raw cashew nuts, which replace pine nuts in this pesto.

STEP 6

Add extra virgin olive oil, minced garlic and sea salt.

STEP 7

Start to blend the pesto to break up the cashew nuts and parsley.

STEP 8

Add more olive oil and keep blending until the pesto turns into a thick sauce.

STEP 9

Once the pasta has finished cooking, save a cup of the cooking water.

STEP 10

Drain the pasta over the sink or using a strainer.

STEP 11

Dollop some pesto sauce and a splash of cooking water over the pasta and gently stir.

STEP 12

Continue stirring, adding  more cooking water for a creamy pesto sauce.

STEP 13

Enjoy the pesto pasta as an easy and healthy lunch or dinner.
