EASY VEGAN  MINT SLICE

This healthy no-bake slice has a biscuit base, creamy mint filling and rich chocolate topping.

Start by quick soaking cashew nuts in boiling water.

STEP 1

Make the chocolate base by blending more cashew nuts and coconut.

STEP 2

Add cocoa powder, coconut oil, maple syrup, vanilla extract and salt.

STEP 3

Stir the chocolate base mixture until well combined.

STEP 4

Press the chocolate base mixture into a lined loaf tin.

STEP 5

Drain the soaked cashew nuts for the mint filling.

STEP 6

Place in a blender cup with coconut cream, coconut oil, coconut and maple syrup.

STEP 7

Add peppermint oil or extract and baby spinach for color.

STEP 8

Blend the mint filling until smooth.

STEP 9

Spread the mint filling over the chocolate base.

STEP 10

Melt dark chocolate for the  mint slice topping.

STEP 11

Add coconut oil to the melted chocolate and stir until smooth.

STEP 12

Pour the chocolate mixture over the mint slice, then chill in the fridge.

STEP 13

Once firm, cut the mint slice into pieces.

STEP 14

Enjoy the creamy vegan mint slice as a healthy dessert or after dinner treat.
