VEGAN CHOCOLATE ALMOND SHORTBREAD COOKIES

These healthy shortbread cookies are gluten-free and easy to make with olive oil instead of butter. 

Start by blending raw almonds into a flour.

STEP 1

Tip the almond flour into a bowl with buckwheat flour, cinnamon and sea salt.

STEP 2

Mix the dry ingredients for the cookies until well combined.

STEP 3

Add maple syrup and extra virgin olive oil.

STEP 4

Stir the cookie dough mixture until everything is well combined.

STEP 5

Divide the dough into portions using a cookie dough scoop or your hands.

STEP 6

Press each cookie dough ball to flatten into a cookie shape.

STEP 7

Bake the cookies in the oven, then allow to cool.

STEP 8

Melt some dark chocolate in the microwave or using a double boiler.

STEP 9

Dip the cooled shortbread cookies into the melted dark chocolate.

STEP 10

Place the chocolate dipped cookies back onto the lined baking tray.

STEP 11

Drizzle the remaining melted chocolate over the cookies.

STEP 12

Sprinkle each cookie with sea salt flakes before the chocolate sets.

STEP 13

Enjoy the shortbread cookies with coffee, as an afternoon snack or healthy dessert.
