Healthy Pumpkin Cookie Bars

These easy pumpkin cookie bars are gluten-free and dairy-free with pumpkin pie spice and chocolate chips.

Start by adding pumpkin purée, coconut oil and coconut sugar to a bowl.

STEP 1

Stir the pumpkin mixture until well combined.

STEP 2

Add buckwheat flour and baking powder to keep the pumpkin cookie bars  gluten-free.

STEP 3

Add pumpkin pie spice - cinnamon, ginger, allspice, nutmeg, cloves - and sea salt.

STEP 4

Stir the pumpkin cookie dough until well combined.

STEP 5

Press the pumpkin cookie dough into a lined loaf tin.

STEP 6

Press chopped dark chocolate or chocolate chips into the pumpkin cookie dough.

STEP 7

Bake the healthy pumpkin cookie bars in the oven, then allow to cool.

STEP 8

Once cool, slice into cookie bars and enjoy as a healthy pumpkin spice dessert.
