HEALTHY CASHEW CHICKEN WITH BROCCOLI

This healthy cashew chicken is high-protein and gluten-free with a homemade stir-fry sauce.

Add tamari, chicken stock, maple syrup, garlic, ginger, chilli and pepper to a jar.

STEP 1

Seal the jar and shake well, then set the sauce aside.

STEP 2

Cut skinless chicken breast into bite-sized pieces.

STEP 3

Toss the chicken pieces in tapioca flour.

STEP 4

Fry the chicken in avocado oil until just cooked through.

STEP 5

Transfer the chicken to a plate, then add onion  to the pan.

STEP 6

Add broccoli florets and stir fry until tender-crisp.

STEP 7

Return the chicken to the pan, then add the sauce and cashew nuts.

STEP 8

Continue to stir fry for 1-2 minutes until the sauce thickens.

STEP 9

Serve the cashew chicken with rice, or on its own for a low carb option.
