HEALTHY GLUTEN FREE PUMPKIN BREAD

This easy pumpkin bread is moist, gluten-free and dairy-free with an optional maple glaze.

Start by adding homemade or canned pumpkin purée to a bowl with coconut oil  and syrup.

STEP 1

Crack three eggs into the pumpkin mixture.

STEP 2

Stir the pumpkin purée mixture until well combined.

STEP 3

Add buckwheat flour, almond flour, pumpkin pie spices, baking powder and salt.

STEP 4

Mix the pumpkin bread batter until smooth and well combined.

STEP 5

Pour the pumpkin bread batter into a lined loaf tin.

STEP 6

Bake the pumpkin bread in the oven, then allow to cool.

STEP 7

Make the maple glaze by adding powered sugar and maple syrup into a bowl.

STEP 8

Stir the maple glaze until smooth, pressing out  any lumps.

STEP 9

Pour the maple glaze over the cooled pumpkin bread.

STEP 10

Sprinkle over crushed pecan nuts before the maple  glaze sets.

STEP 11

Slice the pumpkin bread and enjoy as a delicious gluten-free snack or dessert.
